Alright so for Christmas I really wanted to ditch the turkey and do a Porchetta Roast a la Marty Matheson. I ordered what I thought was a raw porchetta (loin with the belly attached) only to receive an imported cured and roasted porchetta that looks more like deli meat. I’m going to go and get a pork belly and make my porchetta with that but I’m still left with the cured roast. Any suggestions on how to use it? I’m sure it’s delicious
