Why does the first popcorn kernel pop? When cooking on Dutch oven stove top

Trying to figure out how to make the best stove top pop corn. In terms of steam and heat. When to shake the pot,.. but why shake the pot? How much steam to let out and how hot the stove should be. I guess also oil to popcorn ratio. And any other tips you have.
