What books do you suggest for learning to cook? Recipes, techniques etc

G'day, I'm starting my apprenticeship soon and I love cooking and I love learning. I would absolutely love to pick up some books that may be really insightful in developing myself in the kitchen.

A few books I already have in mind are: "Practical professional cookery" by H.I. Crockwell & R.J. Koufmann. "Salt, fat, acid, heat: mastering the elements of good cooking", I'd love a few more suggestions!
