On an YouTube episode of Epicurious with chef Dan Giusti, he made a rolled out “crust” made of breadcrumbs, butter and chives. He called it a “bread and butter blanket” because he never learned the proper name. It’s used as a coating for lobster and fish. Does anyone know the real name for this type of topping?
