How to keep food in jars?

I've always made my own sauces and usually I can use up whatever I have left pretty easily, but I want to know if there is some kind of guide or something for sealing jars and preserving passata, for example. I know my grandma used to boil the jars, but I don't know the specifics and cannot ask her since she's long forgotten how to do it. I'm afraid of attempting it and having it all explode in the kitchen, so if anyone has any resources, they'd be very much appreciated!
