there's a kind of milkshake in Mexico that uses frozen milk, evaporated milk, some drops of lemon, some drops of alcohol, then blended until the foam is made, and then something to flavor it (strawberries, bananan, coffee, cocoa and so on...) is added and blended again.
the result is a thick foam about 2.5x the volume of the original liquid. Now, my question is, what's the role lemon and alcohol play on this?
