Store-bought pre-marinated pork loin doesn’t seem to become dry despite overcooking

Got some pork loin from the supermarket that’s already been marinated. I accidentally left it in the oven for 15 min longer but the meat was still so tender and juicy. Meanwhile if I buy pork loin and marinate it myself it gets over cooked so easily and becomes a log of wood in no time.

Has the meat been treated to preserve the tenderness and juiciness? If so, how?
