What veg would go with squid and a beurre noir sauce?

I have a practical tomorrow and Im doing my working order. We have to do a squid with beurre noir amuse. I just don’t know what to add as a second component(s) and garnish. We have baby marrow, carrots, celery, chillies, coriander, cucumber, fennel bulb, fresh lemon grass, garlic, ginger, leeks, lemons, oranges, onions, Italian parsley, tomatoes, red and yellow peppers, potatoes and rocket and spinach. Can anyone help me figure out what to do with this?
