Any methods of doing a brunch service with french toast without a flat top?

Starting brunch on sunday in a mobile kitchen and we have a very small flat top that will likely be use for burgers and toasting buns primarily. Does anyone have a decent method for cooking french toast in an unconventional way? we have an oven that fits a full sheet tray, a small grill, and a four burner range (though i would prefer not to use that as i already have to cook omelets, eggs and shrimp and grits. any advice at all would be great.
