Pink Peruvian Peppers/Aji

I went to Peru several years ago and just about everywhere we ate, there was a condiment called aji on the table. Found out that it was made from (among other things) red onions and these long, sweet, pink peppers. The fact that “aji” is Spanish for pepper makes googling a little tricky. Can anyone confirm that I didn’t dream this and point me towards a recipe or the elusive pink pepper?
