Three layers in broth?

I made broth today using some chicken carcasses and beef bones and I've now poured it into a container so I can remove the fat tomorrow morning once it's solid but I've noticed there are three layers

On top there is fat and on the bottom is the broth but what is the layer in between? Thanks
