When to add salt with burger patties

I'm making burgers soon. Some recipes use salt and pepper while making the patties. While others season after they make their patties.

I just want to make a yummy burger. I want to season it afterwards because apparently if you season it before, it changes the protein structure. But I'm not sure if it will make the patties bland.

I've never made patties, so my question is, if you added salt later, does it still taste spicy and good? And, If you add salt before does it alter the taste?
