Where would you find out how to use spices?

In general I mean.

Any good compendiums, youtube or otherwise useful information on general uses for most spices?

I have a cabinet full of them, but besides trial and error, no idea how to use most of them or when trying new things, what usually goes with what?

So many, and so many uses, generally see things like paprika used on meats, but rarely else? Does that mean okay to use on any meat?

I just have no idea..
