How Rich and Deep is Spanish Cuisine’s Influence on the Countries They Had Colonised?

As the title suggests, I’m wondering about the strength of the Spanish influence on the countries they had once colonised.

I have the Larousse Gastronomique, but in some areas it’s a bit disappointing in terms of the detail it provides (although, I am aware it’s not a history book).
