How does leaving food uncovered in fridge affect safety & shelf life?

What prompted this question was the idea of prepping cooked rice for a quick fried rice lunch later in the week. Let’s say I wanted to cook a batch of rice, and leave uncovered on a baking tray in the fridge to let off moisture - how would this affect the shelf life compared to rice stored in a sealed container?

This questions extends past rice though.

Almost everywhere online says to store food in air right containers, but there are some applications where leaving food in the fridge uncovered is desirable - like our fried rice here, but also leaving out salted raw meat to dry brine. I think I’ve seen something similar with cooked potatoes.

Does leaving food uncovered in the fridge change the food safety?
