Why do my green onions have a clear goo inside them?

I've been regrowing green onions in water, and I've noticed the past couple times I've used them that there's this clear goo/slime inside them, sort of the texture of fresh aloe. Any idea what this is? I squeezed it all out, and the onions still taste fine, but I have no clue what it is. I've been changing the water regularly, so I don't know what's causing it.
