I want to use a chuck roast instead of ground beef in my beef and veggie soup. What's the best way to cook the meat?

Should I just boil it in the beef stock with onions, garlic, and herbs? Braise it in the oven like a pot roast? I also have a pressure cooker and a sous vide, but I'm trying to eat this thing sometime in the next four hours.

For the recipe, I'm pretty much just going to dump in Lima beans, peas, corn, carrots, celery, turnip, potatoes, cabbage, and green beans in an order that lets everything get done at the same time.

Edit: I could also use some advice on how long the beans need to be cooked in the soup for, I've never used fresh beans before.
