So I've tried cooking panko-breaded tilapia on the stove a couple times, but each time the panko breading turned black very quickly before the fish itself was fully cooked. I know I can chuck it in the oven too, but my oven takes ages to preheat and sometimes I don't want to wait. Am I heating the pan too much? I read online that you should heat a pan on medium-high heat and cook the fish quickly, but it always ends up burning the panko. Any suggestions?
