I attempted to make a soup with vegetable broth as the base. I added water, 1 tsp anise, 3 cinnamon sticks, 3 large garlic cloves, 1 large onion (peeled/quartered), 4 inch piece ginger (skin removed, halved lengthwise) and 2 tablespoons soy sauce. I later removed one cinnamon stick while the mixture simmered for half an hour.
Anise and cinnamon flavors are overpowering. How do I tone it down?
