I am making Dak Gomtang (닭곰탕), korean chicken soup with a base of whole chicken, spring onion, garlic, ginger and onion. In my previous attempts the flavour and taste has always been a bit bland. I am now wondering what I could add to improve...
I am considering shiitake mushrooms, since I have some I will be using for another dish, but I am not certain on how to prepare them for the best result?
I am also considering
cinnamon sticks
cloves
daikon radish
wood ear mushrooms
