I made Melissa King’s corn and coconut milk soup tonight. The ingredients I used are canola oil, red onion, garlic, corn, corn cob stock (made with ginger, a little red onion, garlic and salt), and coconut milk. I blended it all together and it made an off white soup, and I mixed in some lime juice. Then I poured it into bowls to serve. I squeezed some lime juice on top and the drops in the soup turned pink. Does anyone have any thoughts on what the chemical reaction was that caused this?
