How to cook the perfect omelette without white spots?

I've been making omelettes 3-4 times a week for the past month and I've made some progress in getting the shape and colour right (given the right manner of temperature control) but almost every omelette I make has quite a few small white specks. Am I stirring/beating the eggs wrong?
