This was a dish an ex made, on occasion, she learned it from a guy she dated when she was young. She had no idea what the name of the dish was. She never shared her recipe for it, and I have no pictures. I'll do my best to describe it.
It started with chicken, she used breasts (It was the only part she would eat, so I don't know if it was the right part). They were baked with white wine, butter, and tarragon.
Then when almost done she would whip egg whites to a soft peak, and fold mayonnaise into them. This would then be spread over the top of the chicken/wine and cooked until just starting to show a light gold (terrible if overcooked). The chicken was meh, but that egg mixture with the wine/butter/tarragon was to die for.
I was wondering if anyone knows what this dish is called? I would like to see if I can find proper proportions before I start experimenting on my own.
