Earthy flavor of Thai dishes?

I love the unique flavor of some Thai dishes, especially yellow curry recently. There's a flavor that I just can't pinpoint though. I'd say it makes up the foundation of the flavor and sticks around in the background. I think I've noticed it pretty prevalently in biryani too. I think id describe it as sort of a fragrant earthiness. Any thoughts on what that flavor is or what ingredients give it those flavors? I'd love to try replicating the flavor with my own cooking.
