Anyone have experience with soft serve ice cream machines?

So I’m getting a soft service machine for my food truck. It looks like you take your mix, add water and pour it in whatever. But it has a disclaimer that the VATs are not refrigerated and the ice cream must be removed when not in use. Is that a common thing? I could use some insight, thank you!
