Replicating caviar using black beluga lentils (suggestions please)

So this does not have to be vegetarian or vegan, I just recently learned about black lentils and it seemed like an interesting ingredient and it would be awesome to be able to make something as close to actual caviar with them as possible.

Right now my plan is to include things like vietnamese fish sauce, worcestershire (or just actual anchovies?), capers, and other similarly flavored things. Serve them like caviar with crackers and onions and stuff.

Does anyone have any other potential ways to improve the flavor? And any way to make the texture similar? Caviar has a pop to it when you bite into the eggs. Anyone have an idea how to replicate that either with a method of cooking or possibly including some other ingredient with that texture?
