For how long can I proof bread?

I’ve attempted this Dutch oven bread recipe 3x now and I think I finally got pretty close to something edible. I’m now wondering—is it possible to leave it overnight between steps 11 and 12? It says to let it rise for an hour but would it mess everything up if I let it rise for eight at that point? I’m open to other morning Dutch oven bread overnight recipes. Thank you.
