Wanted Shrimp Oil, made Shrimp Mayo..

Im following a recipe from the Bottega Cookbook, where you make a mix of shrimp shells, onions, carrots, celery, tomato pasta, and olive oil. You cook it down, then oven heat it for a bit, then it says to put everything in the blender, add the remaining cup of olive oil, and blend till smooth. Then strain through a coffee filter and bottle the shrimp oil. I did all of this to the letter. and I have shrimp mayo, or something that looks like mayo. Is this recipe completely crazy, or will this separate as it cools and I will be left with a gorgeous shrimp oil?
