What are some tips for a first-time deep fryer?

Planning on making wings for a small superbowl party in my tiny apartment. I'll be using Kenji's method (not the oven based one, though I could consider that)

I'm a strong baker but have never deep fried anything. I have a good dutch oven that's perfect for this and a thermapen. Will it smell up my tiny apartment? I feel that my exhaust fan is fairly weak. Any other tips for a first-timer?
