I'm making a 5 layer double barrel cake with 6inch tins for a baby shower. They wanted a cake that would be light, so I thought of using sponge cake, however I'm concerned that the sponge cake will be too light to handle so many layers. I'm worried that despite the use of dowels and a cake board, the cake will collapse from the weight. Can I use sponge cakes for a double barrel cake, or am I just being paranoid?
This is the recipe I was considering using for the cake. I've used it in the past and the cakes were very light and fluffy.
