Unable to get a good sear on cast iron

When reverse searing or Sous Viding I can almost never get a good sear quickly. I either have the heat too high and the oil either burns and turns pitch black, with the steak also having black bits. Or I try to sear with a lower heat, and the steak starts to cook internally before it gets a decent sear. I’ve tried a few different oils(avocado, vegetable, canola).
