Short rib braising liquid tastes bitter.. help!

Braising sauce tastes bitter.. help!

I’ve made this recipe several times and it has turned out really well. This time however the sauce tastes bitter. Any tips on how to fix it?

Here’s what I’ve done so far:

-salt and pepper the short ribs, lightly dredge in flour and sear in hot pan until browned on all sides; set aside. Remove fat from pan and add some olive oil. - put Spanish onion, leeks, carrots and celery, parsnip in food processor and pulse until finely chopped. Add vegetables to pan scraping up all browned bits. Add salt, pepper and bay leaves. Keep cooking until a crust develops on bottom then stir and add tomato paste. Mix with vegetables and wait for another crust to develop. Repeat until most of the moisture in the vegetables has cooked out of it.
- Add two of cups of red wine and cook for a few more minutes until wine has reduced. (I use an InstaPot pressure cooker for the next part instead of braising in the oven simply because it saves me a few hours and I’ve found they have the same results.) - arrange the short ribs in the InstaPot adding a bouquet garni of parsley, thyme and rosemary in between the two rows of ribs; add whole cloves of garlic; add chopped turnip; add cooked vegetable & wine mixture; add beef stock to cover everything - Pressure cook for 90 minutes - once able to open the pot, take all short ribs out and set aside - strain remaining sauce through sieve into a pan (twice) and reduce on low heat for about 30 minutes - add a 1/2 cup of frozen Demi glace to sauce and stir into sauce (I buy this frozen from the local butcher) - thicken sauce slightly with a little cornstarch slurry and cook an additional 3 minutes - pour sauce over short ribs and cool down - put in fridge

The sauce has a deep flavour but I do think it’s bitter. I don’t know what to do to fix it and I feel like too much work went into it for it to taste just ok.. any advice is greatly appreciated :)
