Made some coffee ice cream tonight by steeping some coffee beans into a vanilla ice cream base. I knew it wasn't going to turn brown, so I'm wondering how to best do that.
I've tried to do coffee ice cream before with concentrated cold brew, but even the slight amount of highly water-based liquid in the mix takes the texture for a turn (i.e., ice crystals). Wondering how best to get that "java" color to this guy. Thinking I could do a splash of chocolate, but trying to avoid it just to have pure coffee flavor, but it could be a last resort.
