Oil based dressing with tamari, making salad wilt

I had a favorite restaurant which made a Chinese chicken salad with a light coating of oil based dressing with a primarily peanut and salt flavor.

Contained a mix of romaine and iceberg lettuce, cilantro, with fried chicken strips, puffed maifun, ground peanut, and sesame seeds.

The restaurant closed, and I can't find a recipe that sounds similar.

I duplicated the flavor by mixing peanut oil with a splash of Tamari, however this made the lettuce rapidly and severely wilt.

How can I replicate a light peanut/savory/salt flavor without destroying the lettuce?
