Knife Sharpening

What is the best way to learn how to properly sharpen a knife? Not just hone off burrs as maintenance, but put a good edge on it? I know the concept, and I have read and watched many tutorials. I have some very nice knives however, and I worry about ruining them. I'm just tired of taking them out and getting them sharpened professionally, when if I could do it myself I'd do it far more often.

Are there classes, or is it something more learned as a trade? Should I just get crappy knife and some stones and just go at it?
