This might be dumb, don't hate me. When dry brining salmon for a smoke, how much of the sugar is absorbed into the meat? For caloric purposes.

I am on a low sugar diet. I see that the brining is used to extract moisture, and I'm just wondering if any of that sugar is absorbed into the meat.
