Carnitas in the crockpot—how to store before tearing?

Our pork shoulder has been cooking in the crockpot all day on low, it seems like it’s in a good place, but we don’t really want to tear it all up at this point in the night. We’re also afraid of leaving it out in a crockpot (with a lid that leaves a small gap in it) because of bugs—is it bad to put the whole thing in the fridge and tear it up tomorrow?
