Substitutions for soaked almonds?

I have a vegan soup cookbook that uses soaked almonds (and other nuts) a lot. I'm assuming the soaked almonds are supposed to make the soups creamy but I'm not liking the effect, the time investment and actually buying the almonds lol. I'm not vegan so I'm wondering if there are better options.

In the recipes the soaked nuts are blended together at the end with the cooked soup or at the beginning in a cold soup recipe. They're never cooked directly.
