Weekly Discussion - Herbs

Herbs are a major component of flavoring food that often gets neglected in the U.S. in favor of spices. Or, to be honest, salt and hot sauce. But used appropriately they can add just as much flavor and an element of freshness you can't get any other way.

What are your favorite herbs? What dishes benefit the most from their addition? What works well dried and what's vital to use fresh?

Any shopping tips for getting the tastiest herbs? Any storage tips so they don't rot immediately?
