Should we download all Steam/Origin/Epic Store Games?

I recently learned that we do not outright purchase any games from these digital storefronts, only rent them indefinitely. This is so that these digital stores don't have to pay Millions out to users if they ever go belly up. Conversely, it means that all users who had purchased a game on Steam, but did not have it installed on their PC locally, will lose that game if Steam ever goes under.

So here's my question: Should we invest in a High Capacity HDD & download all purchased games, just in case? What're your thoughts for and against this idea?
