How to recreate vegetables from Ruth's Chris?

My wife and I went to dinner at Ruth's Chris a few months back and ordered some Scallops as an appetizer. They were great but they were served on a bed of vegetables that were unbelievable.

They seemed relatively simple. They had some bite to them and it seemed like they were maybe basted in garlic butter. I've tried recreating at home with no luck. There were onions, carrots, mushrooms and possibly chard.
