Can y'all help finding a recipe for a Chinese noodle soup?

There's a great noodle and congee place in my town and I love their soup. On the menu it's just called noodle soup and I don't know what region the people who run the restaurant are from but apparently it's a Cantonese style soup. Basically it's a standard broth poured over a wad of thin wheat noodles. The noodles have a little bit of pull and resistance when you bite into them. There's some scallions on top of the broth and they'll add wontons or sui-kai and some kind of meat, brisket or fish balls, liver or some pork. Occasionally the broth will have a little ammonia tang so I'm guessing there's some kind of fish product in it. Here's a pic of the soup: https://imgur.com/a/jFWy2kW
