Making sago and it turned out bitter and i have no clue how. Can i fix it?

So this is my second time making sago, and the first time it turned out very good, this time i used different fruit and now its really bitter (the only things i changed were the fruits and the amount of tapioca, which didnt change much). I cooked the tapioca pretty much exactly how i did last time, except this time i let the water heat to a rolling boil instead of just before boiling on accident, however my boss (who makes sago frequently) said to add the tapioca when the water is almost at a rolling boil. I used only mango my first time, and this time i used even parts of watermelon, cantaloupe, and honedew, with about half portion of pineapple. All fruits were ripe. Any help?
