Does anyones rice paper recipes keep failing?

Hello,

As you read the title all my rice paper recipes keep failing.

Buldak in rice paper? Rice paper disintegrated in my hands

Mozzerella sticks? Cheese was raw and the rice paper was sticky yet still hard

Air fryer rice paper churros? As sharp as glass

I genuinely dont understand, please help!
