Can I used frozen heavy whipping cream in this ice cream recipe as well as for other ice cream flavors?
As the title says, I have quarts of pasterized heavy whipping cream that I bought to make this ice cream recipe as well as a few others. It's the only heavy cream in my area.
I had bought it on sale in the fall, but my ice cream churn decided to bite the dust during that time, and I wasn't able to make any ice cream.
So rather it going to waste, I froze it. I have since read that it causes structural changes to the heavy whipping cream and that it won't whip up into fluffy whipped cream.
I now have a new 4 quart ice cream churn and I would like to make some ice cream
Will it affect my ice cream base the same way as does if trying to make whipped cream?
Here is the recipe:
Chocolate Ice Cream
2 1/2 cups half and half
5 1/4 cups heavy cream
2 1/2 cups sugar (I plan on using a 1/2 erythritol, 1/2 sugar mix to cut down on the sugar needed)
5 1/4 Tbsp. unsweetened cocoa
Combine all ingredients in a mixing bowl. Gently mix until combined.
Transfer ingredients into the churn canister.
Follow the churns instruction manual to make the ice cream.
Serve.
