So I tried to make the slut (a coddled egg over potato puree) and I actually got pretty close, but one thing that keeps happening is my egg has some like white snot bit that's so gross. I googled it and it's The part that holds the yolk down I guess? But it's super gross I can't stand it. How do you get rid of that?
I tried making it in the sous vide which is how they do it And then I'm also lazy sometimes and I just simmer water and stick it in there for like 7 minutes.
The yolk is running, when I do a direct simmer sometimes the whites get more cooked than I want them to be but there is ALWAYS the snot!!
