I've finally managed to get red lentil tofu right, especially the sauce and how to cook it to my taste, but now I have a different issue, I have no clue what to pair it with, because the taste profile is way different than what I expected, with polenta, rice, potatoes etc. feels like eating bread with bread, but given that it's lentils, it makes no sense to pair it with meat, so what then ?
