Good bye non-stick, looking for my perfect new set

That's it... I'm done with non-stick stuff and ready to spend some money on good stainless steel !

I've read many "biased sponsored tests", a couple of reddit threads, watched youtube video but I still have some doubts to not overdo it.

Right now I'm doing 95% of the job with my 28cm frying pan, and 18cm saucepan (+ 20cm if I need 2). And from time to time, my cast iron pot.

And still I can't decide if I should go with the full package, or the more reasonnable choice money wise.

The bare minimum would be 28cm SS pan + 28cm carbon steel pan + 18/20cm SS saucepan.

Sometimes however, the 28cm pan feels a little bit overcrowded, so 32cm could be nice as well.

And I also read many times that 24cm pan is one of the most usefull. And that 16cm saucepan is also very common.

In short, I'm hesitating a lot to go all-in:

16/18/20cm SS saucepans + 28/32cm SS frying pan + 28cm carbon steel frying pan and maybe a 24cm frying pan but I don't know if SS or carbon steel makes more sense.

On the other hand, having all these and still use only 30% of them would be a shame.

So I'm hopping for some feedback either from people who bought much more that they actually needed, or have no regret for their full set, or went for the minimum at first. Any insight would be much appreciated !
