I often don't use up all my fresh mushrooms, so too much ends up going bad. I see a huge container of "gourmet dried mushrooms" for $13 at Costco and wonder if this would be a better solution. They contain portabello, porcini, oyster, and yellow boletus.
I've only used fresh in the last 40 years. Yes, I know I need to soak them first.
In what types of preparation or dishes would dried mushrooms be terrible or great?
For example, I'm guessing dri d would be great in tomato based pasta sauces and risotto. But terrible if I plan to have them as a side dish by sauteing in butter and garlic.
