So I am a huge cheesehead, and I've been searching for a way to modify Tini's Macaroni and Cheese to fit my diet better (low-fat and low-sodium). I know I won't be able to get truly low-fat, but I can do better than the original recipe by using half-and-half instead of cream, and 2% (lactose-free, I can't handle lactose) milk instead of whole milk. As for the seasonings, and salt, does anyone have any recommendations on how I can swap out salt for other seasonings to keep the sodium levels down? I already have my cheese trio picked (going to shred it myself):
- Gouda
- Sharp White Cheddar
- Swiss
